Did something I've never done before today - cooked with lemongrass and coconut milk (seriously, never).
Needed a chicken dish that could cook in the oven on the timer, that would be tasty for DH and I but that wouldn't scare the kids too much. So took a whole chicken, put it in the pot with a can of coconut milk, 4 inch-long sticks of lemongrass, the zest and juice of a lime, a knob of fresh ginger chopped small, two chopped cloves of garlic, a handful of coriander leaves chopped up, some chicken stock, and a pinch of salt. Cooked it in a tightly covered pot for an hour and a half and served it with plain white rice and steamed broccoli. Delicious - subtly but definitely flavoured, and not too much work to put together.
Everyone ate it and everyone enjoyed it. A result, methinks :-)
